Determinación de compuestos fenólicos, metales y su efecto sobre el potencial antioxidante y tóxico en mieles procedente de la especie Apis mellifera

Abstract
El creciente interés en los compuestos polifenólicos de origen vegetal se debe a la apreciación de su amplia actividad farmacológica en especial su capacidad para actuar como antioxidantes en los sistemas biológicos (Benthsath, Rusznyak y Sent., 1996) . El mecanismo antioxidante esta vinculado con las potencialidades de unirse a los polímeros biológicos, tales como enzimas, transportadores de hormonas, y ADN; quelar iones metálicos de transición, tales como Fe2+, Cu2+, Zn2+, catalizar el transporte de electrones, y depurar radicales libres (Saskia, van y Bast, 1998). Debido a este hecho se han descrito efectos protectores en diferentes patologías patologías. Actualmente entre otros factores los producidos por el cambio climático condicionan una serie de efectos negativos sobre la especie humana mediados por la generación de radicales libres. Existe tanto la protección endógena (Ames et al., 1993), como la incorporación de productos naturales capaces de actuar contra estas especies (Manach, Scalbert, Morand, Rémésy, y Jiménez, 2004). Una estrategia para contribuir a disminuir el daño provocado por estas especies y que permite mejorar la calidad de vida, es sin duda la incorporación de miel rica en polifenoles capaces de producir actividad antioxidante (Aljadi y Kamaruddin, 2004; Al-Mamari, Al-Meeri, y Al-Habori, 2002).
